Spacecraft Scale real small to get more use of available space
This may be an opinion answer, not sure. I was considering making all my spaceship models really small to get more range out of available space. Does that make sense? Or will it not matter? and move them by small decimal amounts vs whole numbers? Thoughts?

I don't think you should worry too much about the scale of Assets, unless you absolutely plan on having them really far away or small, in that case, you would make them with as less polys/tris as possible. I would personally think about what you can do with the camera and perspective instead.
You should also tell us more about what exactly the game is about and others may be able to chime in with some help for you.
Think Eve (closest I can think of) with a touch of Stelaris. You get one ship, multiplayer, galaxy travel and well as withing a star system/planetary system. Guess you could say, the typical space trader.
