Network.update spiking...
Network.update is spiking up to 100ms every 10 seconds or so. Anyone have any idea what might be causing this? Even with deep profiling Network.update is the only function listed.

You don't happen to use RPC and freely bomb the network with it? RPC are sent immediately so if you don't design your code to do it smartly and especially do only what really needs to be done, you will pay rather heavy prices. For the server it can at worst leed to a congestion of the pipe which leads to spikes or at worst temporal lose of connectivity when the hardware interface resets.

The game averages somewhere around 500~700bps... however, I haven't wrapped the RPC calls at all... if that's relevant.
