Make some; there aren't any built-in. In the project view, select Create -> Physic Material. Also, there are some in the standard physic materials package, which you can import.

Here are the original Bouncy, Ice, MaxFriction, Metal, Rubber, Wood, and ZeroFriction from Unity:

Standard Assets comes with several. If you didn't add them when you created your project you can import them after the fact.
Also, you can quickly create your own: Assets->Create->Physic Material.
There isn't a Standard Assets package anymore in Unity 3; I'm sure you know that, but just in case I'm pointing it out because people tend to get confused with Standard Assets ($$anonymous$$obile).
Unfortunately I don't get to play with 3.x much, since our studio has everyone kitted out with 2.6. $$anonymous$$akes me sad that the free users get all the fun.
