I would like to create a strategy game map with 2dpolygons as terrain. How do I add a material as texture?(Beginner Q)

This is my first Q here on the forum, so, first of all, thank you for the opportunity to access the "unity hive mind"
I am in the process (read: The bloody beginning) of creating a strategy game. My desired end state is to have irregular (that is: non-boxy terrain) where I draw polygons and the polygon is then filled out with a certain texture.
I was hoping I could simply add material to a polygon collider, but this is where it gets wonky. The Texture/material won't show. I also tried material won't show. adding various renderer (i.e. mesh renderer) and giving them the material, but this also didn't work. The Mat appears in the inspector, but the polygon is not filled out.
I am more and more getting the impression, that I need to write code for that, and that unity doesn't support this vanilla. But maybe some of you more knowledgable people can drop me a hint, how I could get there.
