Unity 3.0 soft bodies
Does anyone know if Unity 3.0 will have soft bodies like Blender?

It does not. It has been requested on the feedback site and has begun to be implemented.
Although its not perfectly clear, it appears that the feature will appear when they update PhysX support in Unity 3.0 this summer.

Old answer; soft bodies are supported with Unity 3, which is scheduled for release "this summer".

This preview video for Unity 3 has a section showing soft bodies @4:35.
Soft bodies are implemented as part of the cloth physics in Unity 3, with the PhysX update. The video shows soft bodies working at the end.
