When going from hipoly to low poly, by baking normal map, can you also bake the texture from hipoly model to low poly model?
If i were to bake light mapping into a model, in Unity, would I be unable to darken it, would it always be illuminated even if no lights on in scene?

You can darken it by just giving your material a color, for any texture if you set the material color to black it will appear as pure black(no texture) so you set a dark grey as you wish to and even play with trasparency if needed.
