Answered. And I asked sort of the wrong question.
Can you change a Game Object's pivot point in the scene view? (2D)
I thought I remember a way of doing this without having to open a sprite editor. So as the title says, is there a way to edit a game object's pivot point within the scene view?

You're talking about two different things here. A gameobject, with its transform component, does not have a changeable pivot. It's at where the position of the transform is. If you want to change that, you'll have to child it to another gameobject. If you want to edit the pivot of a sprite, that's only possible through the Sprite Editor window. You'd need to program an editor script for helping you do that another way.
Sorry, yes, I explained it incorrectly. I'm doing the Angry Birds demo here and was wondering about the catapult pivot point for the rubber bands connecting. So you did answer my question, because it appears that I can't modify that since it's just an object rendering an image and I'd have to actually modify the image.
Thank you for clarifying that for me!
