Do I get to keep the free essentials packs after unsubscribing from Unity Pro?
If I were to purchase a month subscription to Unity Pro, claim the VR Essentials pack, then cancel my subscription, would I still get to continue using Final IK and the other the assets from the pack after the end of my subscription?

You can not unsubscribe after one month. You have a minimum subscription time of 12 month. After that period you can cancel the subscription monthly but not before that period.
As far as i can tell you can keep the essentials pack, at least everything that is not a subscription itself.
