Run a simultaneous "viewer" build.

I would like to run two separate independent builds. The first one controls input and the second one is intended to be rendered on a separate display and only show what the player is doing via a fixed camera (that's right, no input whatsoever, just watch... fairly simple huh?)

Well actually not for me, I've been struggling to find a way to make this happen and can't think of something that works. I've tried networking but due to inexperience I'm not sure if I'm able to use the same PC as both client and server (and no internet connection since it's supposed to be an offline app, I've also surfed the net for solutions but found rather few reference... Do any of you guys have at least a slight approach? Any hints or help would be higly appreciated. Thanks in advance!

You can run client and server on the same computer. As to the other part, shrug I use the 'scene' view in one tab while playing in game view, but it would be nice if the 'scene' view would auto follow a gameobject. I think you could also create two cameras giving them 50% of available real-estate each, the left would be actual client/interaction/gui etc, the right would be just view.

getyour, you can lock the scene view to a game object by pressing shift-f while having it selected, or alternatively from Edit -> Lock view to selected. It'll break if you manually move the scene view afterwards.

OP, this seems like you should be able to do this with networking. Ip address 127.0.0.1 is (by default - it can be changed, I think...) localhost i.e. the same computer.
