How do I make a non-humanoid ragdoll?
I have a model of a dragon-like creature which I would like to make into a ragdoll, but the ragdoll wizzard does not seem to work on non-humanoids.
So how do I manually make a ragdoll?

http://unity3d.com/support/documentation/Components/class-CharacterJoint.html
Read the manual about how to set up a joint, each joint has a set of variables that limit their movement. Joints don't need to be connected to another rigid body (they can be restricted to world space) but in your case you'd attach each limb to the body of your dragon. You can slide the values around on the inspector and a gizmo will be rendered on the editor view to show you the limits of movement.
After you've set your movement limits you can mess around with how floppy you want the rag doll to be, this is done with the spring and dampening forces. If you're not used to rigging a character it'll take a long time but you'll get used to it.
