You can adjust collider properties while recording an animation. Press the red circle in the animation window and adjust your colliders frame by frame.

@$$anonymous$$ is there anyway I can add a box collider for just a single frame - and even when the record button is on in the animation window, my changes apply to the non-animated object

Yes, you can add a box collider to your object and activate it only during a single frame. While recording animations you will see the changes in the editor, when you stop recording your object will revert to it's starting state.
