Use AddForce as gravity?
Due to the details of the game I'm working on, I cannot use the innate gravity in Unity but need to be able to modify it between different objects, so I'm using AddForce. However, using AddForce seems to ignore any sort of "acceleration" to max downward velocity, the object immediately starts falling but never accelerates further. Any ideas to have this function more like gravity? I've also used ForceMode.Acceleration and the result appears to be the same.

You need to use a ConstantForce. AddForce only applies for one single frame.
