Mesh Renderer and polycount
if an object is not rendered in game, will the mesh/polygons still be calculated?

Yes and No.
They will not be rendered by the graphic hardware. But they may still be sent to it depending on culling policies (occlusion, frustum) and if there are part of a static or dynamic batch (and maybe for other reasons, I'm not an expert).
