Produce a game from scratch
Just a very simple question, I have read around the web site and it seems that I can create a working game including all characters from scratch, is that so? Sorry if the answers are there somewhere I must have missed them if it is.

Yes, you can. Just needs a lot hard work! Characters and textures you have to create outside Unity with, for example Blender and GIMP (they are free.) Mostly everything else is covered in Unity.
Start learning with some tutorials, and when you feel like you handle things, start making a game from scratch! :)

That is what I was thinking, your characters are made outside the framework of unity.
What is the common unit linking size to all packages, eg how tall to you make your character compared to the landscape within Unity?
First of all, you shouldn't add messages like this as an answer. Next time add new comment to answers, ok?
To answer your question: I think it doesn't really matter. You can scale your imported models afterwards in Unity. It could become a problem if your character is microscopically small or enormous. Just make it neutral sized, and you can scale it later in Unity. Btw I'm not a modeling expert, but this is as far as I know true.
Also, correct me if i'm wrong, but i think that one unit in unity responds to one real-life meter (3.28 ft)...
I'm not really sure about that, I've never thought about it... :D
Yes, each unit in Unity is usually assumed equal to 1 meter. Scaling models should be generally avoided because it interferes with physics - read the topic Use the right size in: http://unity3d.com/support/documentation/Components/class-Rigidbody.html
