What are Rays and Raycasts?
I'm still new to Unity's API, and I briefly looked over the scripting reference on Rays.
Can someone please explain what they are and how they should be used? They seem to be useful with collisions but that's all I really know.

This isn't a technical question, this is more a request for training. I'd suggest looking around at the various Unity training sites (3DBuzz, Lynda.com, BurgZergArcade...).

I was hoping to have someone just explain what they are. I'm not requesting any sort of training, I was just interested in the concept.
I've been to 3DBuzz before and I also looked over at UnityCookie, great sources of information.
