Gravity is an acceleration, which is a change in velocity. The velocity of an object under the influence of gravity already naturally increases over time. *

Under most everyday circumstances, the human eye will not perceive this effect. The same is true for most physical scenarios in video games.

"It all happens so fast" is the reason we don't typically notice this. Also, our brain knows how falling objects are supposed to behave, so we disregard the details.

If you would like to exacerbate this naturally occurring effect so the human eye is sure to notice, you could increase the object's gravity coefficient for each frame it is not grounded. This would involve toggling the rigidbody to NOT use the project's gravity, then attaching a script similar to this:

 void FixedUpdate() {
  if (!grounded) {
   gravityVector *= 1.01f
  }
  else {
   gravityVector = -Vector3.up * 9.81f;
  }

  rigidbody.AddForce( gravityVector );
 }

[In reality, an equilibrium is established e.g. planets form elliptical orbits as they "fall" toward the sun, or e.g. a terminal velocity is achieved, beyond which gravitational acceleration produces less or no change in velocity. Neither of these situations are likely to manifest in your game unless you purposefully create them.]
