So, unity automatically will mipmap? Or no?
I'm not entirely sure what mipmapping is, just now looking into it. But, if you have a texture, does unity automatically, rescale the resolution of it at further distances? I know I read somewhere that unity does this already with quality settings, but I suppose that would not change based on distance, just on quality setting....
So does unity have a way to automatically do mipmapping for you? As in lowing texture quality at a distance? Or does this need to be coded?

Yes it's automatic (except of course for GUI textures). You can switch Texture Import settings to Advanced and play with the settings if you want to adjust the effect.
Do you know if there is a way to drop off just normal maps at a distance entirely? Or would this not make much of a difference from resolution scaling?-I mean performance wise
