Why does my game look different in Bluestacks then it does in unity?
When I play my game in Bluestacks to test it out first of all the game play seems choppy (not smooth) and secondly the text seems to extremely close some parts overlapping slightly, why is this the case?

You can read more about that in the FAQ.Don't ever use emulators if you have a real device in your hands. ;) Emulators are a nice idea, but 80% of them will not emulate a program realistic and reliable for your device.
Just connect the device via USB and drag the .apk file over.Also make sure you build for the right Android version.
I use dropbox and the app on my device, because my USB cable is broken. ;)
Developing for handheld OS can be tricky sometimes.

I used a phone to test the game it ran a lot smoother but the text still looked different I don't understand why. Thanks !
Interesting...normally the font will always look same as in Unity, no matter which device, since it's an asset in Unity so it's Unity that is rendering it.
Can you be more specific how the text looked different? Was it not clear like in editor, was it too small in relation to other UI ellements, etc.
I don't know much about android.
With regard to the fonts, that sounds like you're using dynamic fonts, which Android doesn't handle. I get what you describe if I use the built-in Arial font. Try switching to a truetype font.

You can't possibly test performance in an emulator - you need to use a real Android device for performance testing.
A screenshot would help, but I'm guessing that you haven't set up the canvas scaler correctly to account for different screen resolution/aspect ratio.
