Writing to text files
I know that it's possible to take a text file and read it, but is it possible to then write on that text file too?

Of course. This is basic functionality every programming language provides. link
Javascript doesn't seem to have a function for this, and the scripting API for unity didn't have any results for writing to a text asset, just for reading it
Reading and writing text files are not functions of any languages, they are functions of the .NET framework, which is language-independent. You use them in Javascript exactly the same way you do in C# (accounting for syntax differences where applicable, of course). The Unity documentation doesn't cover .NET, the $$anonymous$$SDN docs already do that. The Unity docs cover only Unity functions. Do not mix languages for this, there is no reason for it.
