Prime31 GameCenter
I know that Prime31's Gamecenter plugin came with a few example scenes, but I'm still having some trouble understanding exactly how this works. Are there any useful websites or online tutorials that you guys are aware of that might help someone learn how to use these plugins? I've tried looking, but I've so far been unsuccessful. Thanks

Once you have the Prime31 plug-in correctly implemented, you should have access to a bunch of Static Functions that let you retrieve/send info to iTunes Connect. You do need to understand how GameCenter works on the Apple side first, so I would recommend reading up on that first.

Definitely set your app up completely in ITC before messing around too much with Prime31.
