How to design scene/code for multiple game skins/styles?
For example I want a bright sunny style or a dark looking industrial style.
Is there any way to make swap materials from sunny to dark and vice versa with a click of a button for all game objects/materials on the scene?

Well, sure, Unity uses programs, and programs can do anything. But there's no shortcut for you as a designer. You will always have to, by hand, make both looks yourself. Then you can do more work and program a button to go back and forth.
I get the feeling you might have more luck in a non-Unity-specific modeling(?) forum, asking how to make a scene have a a certain look.
