I would also like to know. This seems like a useless button. What is the intent of this button? Right now it does nothing on my custom scriptable objects.

A bit late, but couldn't find a direct answer myself, so still posting it here for others:
https://docs.unity3d.com/ScriptReference/Callbacks.OnOpenAssetAttribute.html
You can use that Attribute on a static method. Then you can filter out if this object is the object you are interested in and do some custom logic.
