Why does Unity triangulate .fbx files?
I understand Unity triangulates models and apparently that's because they need to be triangulated, but why is this? Why won't quads suffice? Is this because of lightning?

Everything triangulates models, because the only thing graphics cards can understand is triangles. Some programs show entire quads (or more, which is freaky) to simplify the view for you is all.
