Programmatically Interfacing with Keyboard Shortcuts in 2019.x

Now that we have the ability to define our own custom shortcuts underneath Edit/Shortcuts I am wondering if anyone has tried to make custom shortcuts to plug into this interface that are not already re-programmable or readily apparent.
For instance. I myself would like to define a shortcut to toggle the grid in the Scene view...I am not sure how to go about doing that.
