bad quality icon on iOS

why is the quality of my apps icon so bad when it is compiled with unity and released via app store?

The application icon is viewed as a texture by the editor. So texture parameters such as scaling and compression method are applied to it. Try using the 'GUI' texture type with 'Truecolor' texture format. Also, I would advice to use pre-scaled icons that matches iPhone/iPad requirements :
iPhone 3+ : 57x57
iPhone 4+ : 114x114
iPad : 72x72
