If I have a walk and run animation like one from Mixamo, do I need separate animations for walk left/right and run left/right to get the animations to look right when running or walking around? Or is there some way with Unity or another program to alter them to get the transitions I need?

You can try blending them in a blend tree within Mecanim - that's normally pretty useful for getting the effect you want.
That might help me get a smooth animation from walk to run but I don't think it will help with a turn left or right animation.
In fact isn't that how all of the $$anonymous$$ecanim demos do turning in any case?
No they have separate animations for walk turn left/right, run turn left/right. They may blend between walk strait and walk turn left but the animations are separate.
