Burning Mesh away
how would i go about creating an effect of an enemy catching fire and the mesh burning away in random patches after it's been deemed dead?

Use particle system for fire. Edit the mesh to remove triangles for the other thing. http://unity3d.com/support/documentation/ScriptReference/Mesh.html
