Unity 4 don't detect the bullet collision... (?)
It works very well on Unity 3.4, but when I build the project in Unity 4 the bullets don't detect collision with the airplane. We don't use Raycasting because we want to see the bullets...

This approach is wrong. Using bullet collision will always result in missed hit. You can still draw the bullet but the collision should always be performed with raycast when dealing with very fast objects.
