Signing the android apk with a cryptographic key?
Can Unity do this for you? Or do i have to fiddle with the apk after Unity has made it?

Not sure If I understood correctly.
Isn´t enough the signing section on the Android player settings? You basically créate a keystore with password that you feed into unity Android settings and on that way you sign the application right inside unity.
