Build games for Iphone (ios), does OS X version matters?
To build games for Apple Store i know i need a MAC with OS X operating system (of course) in order to build the XCODE unity generates.
My question is, does it matter which OS X version the mac has? Or is it going to limit the supported phones with older version?
if its' Mac OS X 10.8 or Version 10.14, etc..

Well, you need at least OS X 10.11 version or later. Thats all that matters mostly. If you dont need specific version of xCode or anything then you should be fine with being up to date.
