Mario Kart Wii Physics
How do we make a kind of car, that can traverse all kinds of terrain but cannot rotate onto defined walls? It also should not flip over in any situation.

The Unity Car Tutorial has more than you need to get you started in making a Mario Kart game. You can adjust the scripts to suit your needs and achieve the gameplay you desire.
I have tried it before but it flips easily. I have some loop-de-loops and so the 5-second timer may not be a good solution....
Those can all be adjusted with the wheel collider values and changing the center of mass.
