Touchscreen in Unity
What's the equivalent in the unity development environment of touching the screen on an iPhone. Is it a mouse click?

As far as I know, there is no equivalent thing to touch input. It does't work like that. That is why Unity provides with an application called "Unity Remote" on the app store (free to download). It can be use to get iOS (android) touch input from an actual device without installing your application on that device.
That means you can run your game in Unity editor and get touch input from the remote running device. It works over wifi, so both your Unity development computer and iOS device needs to be connected to the same wifi network in order for it to work.
