How can i change the gui text to look like the super mario GUI text, that is textured and coloured?

With a gui text object, you'll want to change the "Font" and "Material" by dropping new fonts into your project and dragging them into the fields. You can make a material that uses the "GUI/Text Shader" shader and change the text color manually on it. With scripting, you'll want to set up either a guiStyle or guiSkin to handle this dynamically.
ok, how would i set up a 2 colour font- so one colour as an outline and another as the actual text?
That gets a little trickier. Check this post on the forums for more information on how to do this: http://forum.unity3d.com/threads/13789-Text-Outline
