How to use a 2d position on a texture to find a 3d position on a mesh using UV maps
Basically like texture painting in reverse, if I have a texture and a mesh with the texture applied, and I choose a pixel on the texture, can I find out where that pixel is in 3d space on the mesh?

Does it has to work on any mesh or can you make some assumptions?
You have to find out wich triangle in the mesh the point is on. Then you can interpolate the vertex coordinates of those three points with bi-linear interpolation.
