How Unity provide ability to play Android, iOS configurations on PC/macOS editor?

Hi, everyone.

I am working with Unity3D more than 3 years and I realized that I do not understand on of the common things that I am working with.

We can play in Editor Android version, or iOS version, or other platform. How can it be?
