Mesh Culling
First, as an example the ISO camera view inside the editor has the exact culling I am after.

I want to be able to cull a mesh at runtime. Is this possible, and if so how would I do it? The best solution is if I could just take a cube and say "everything inside this cube will hidden from camera view", so I could show a mesh sliced right down the middle.

Just FTR, you'd have to simply do this by hand. The .mesh is completely available to you in Unity - it's just an array of floats. Or, buy a tool that helps with chopping up meshes, in the Unity Store (something there might get you started).
