Changing normals per pixel

Hi, I'm trying to make an effect where I have a shader create bands across an object. I want to display these bands by changing the normal of the mesh so that every second band has vertical or horizontal normals (and this is done in the shader). This all works well if I have a mesh with many verts.

However when I use a low detailed mesh then this looks very patchy as the verts are farther apart than the size of the bands. What I want to know is can I fake the normal that is used for lighting on a per pixel basis?
