Creating a new Leightweight Rendering Pipeline and deleting the old one worked for me - don't know why but it did.
In addition, there's a setting (probably on the pipeline asset but could just be in general graphics/lighting settings) that controls how far away shadows are generated, which was for me set to around 50 units (from camera, I assume), and I tend to assemble prefabs at about 9000 units up where there's no clutter so that caused issues for me too.
