Art/textures aren't low or high poly. $$anonymous$$odels are.

I know but that art style is called "Low Poly", because it has the look of a low poly model.

It has the look of a low poly model because they are low poly models. So make objects (models) with a small (low) number of tris/faces (polys).

Yes , but the problem is that the vertices are shared so the texture isn't pointy it is smoothed out. Thus not giving the effect that the models are low poly

To disable any automatic smoothing in Unity you can click on the imported model and use the inspector tab. Under normals & tangents change normals from import to calculate and set the smoothing angle to 0.

How to make models without smoothings depends on the modeling program. For instance in Blender you can hit a button to toggle smooth shading and add an edge split modifier to force exported models to disable smoothing.
