How do I change a game object's saturation?

The game starts of in black and white. I'm trying to make an object's " color saturation" change when the mouse is over it, so that it stands out from the environment. when the player moves the mouse off of the object it will revert back to black and white and blend back into the environment. I have used post processing but cant seem to make this happen only to objects. any suggestions? thanks
