Third Person Fog
I'm trying to implement distance fog and all the information I can find points to the Rendering>Lighting settings. That looks perfect for what I want, the only thing ruining it being the fact that my camera is in third person and I want the distance to which the fog refers to be from the character, so that the visible area doesn't shift about as I rotate the camera around the player. Is there some other way to get a similar-looking result for a third person perspective?

What you are looking for may actually use a different technique since it is not based on camera distance but on character distance similar to a fog of war. If your camera moves with your character, simply put a semi transparent gradient on your HUD UI layer. If your camera is not locked to your character position, then you could have a separate plane in front of the camera that is moved with logic in LateUpdate().
