UI Text changing size? really confused

I started out attempting to add a scoring system to my game but now I'm attempting to learn how UI works in unity. I right clicked in the hierarchy and clicked on text then edited it and got it to the correct size but when I build and run it on my android phone the text is tiny. The sprites are all the correct size but the text is really small. Is this supposed to happen? How can I change it to work properly? I also realised that when I resize my scene view and game view the text doesn't resize with it, what's going on???

Any help would be appreciated, thanks!

In order to resize properly to different resolutions and aspect ratios your UI Canvas which contains your Text item or its parent should use "Scale with screen size" as "UI scale mode" in its CanvasScaler component. Screen match mode should be either "Expand" or "$$anonymous$$atch width or height" depending on what behavior you expect. Also read this or watch this or both to understand anchoring system.
