Project Organization and Asset Managment
I'm completely new to 3D development so was wondering where I might read up on best practices for project organization and asset management.
For instance should I create and edit assets with other applications like Maya and Mudbox directly out of the Unity project asset folder? That would make sense but just wondering.

Yes, I think it's a good idea, because the organization is different and the folders of a Maya project are too many and can be difficult to see all this directory tree in your Unity project.
