How do I change Tilemap during Play Mode?

Hi there! So I want to make a 2D platform game project where a character moves over some platforms that you can change manually just clicking on the screen, so they should appear on a grid and change between them to seem like they are connected, similar what happens with the Custom Tiles of the 2d-extras example Unity showed last year.

I can do this on Edit Mode. I mean, I can use the brush to put some tiles in a tilemap with my own sprites and everything works, but I want to do it as a mechanic of my game, so changing the tilemap prefabs on Play Mode by left clicking. I don't have idea of how to access tilemap to modify. I just think this would be better than create a prefab for each click and take advantage of the Composite Collider 2D component.
