Why does my GUIText sometimes show and sometimes not?

The GUIText object has been throwing me all over the place because sometimes I cannot see it in the game. I have a game board that has both a score and some center text to alert a player and those show fine but as soon as I cover it up with a quad that fits the screen I can no longer get any GUIText object to show. I am new to the GUIText scene but would really like to know how to figure this out. How am I to go about with GUI text and stuff?

Sorry, don't have the code with me. The GUIText doesn't even have code in it. I just put the object in the scene and have it hidden during the gameplay and have it active when the game over screens shows but the camera isn't for some reason picking the GUIText up and showing it.
