When I restart the game, it doesn't return to the start time I wanted

The balls in the game are moving from top to bottom. The speed of this movement depends on the second, if it is greater than 0, the speed is 100f, and if the second is greater than 10, the speed is 200f. Increases every 10 seconds. When I restart the game, seconds do not return to the initial level. I think the time of the game is based on the first opening of the game. How do I fix this?

void Start () { Time= 0; } I've tried this. It didn't work.
