iOS game crashes before launch because of too many image assets?
The images are stored in Assets/Images/ and NOT in the Resources folder. I've added all of them to a list of images in scriptable object so I can access them during the gameplay.
The game worked fine till I had 600 image assets in the game. I added ~1000 more and now the game won't even launch. The image are 256 x 256 with max size = 256 and format = true color.

Yeah, loading too many assets will crash the game.
Loading 1600 images sounds excessive, doesn't it? You may have to rethink your design.
