Strange rotation going crazy when recording animation
Hi everyone! I'm a beginner at Unity and I was doing pretty well at animations. I was working on an bone animation of my character and, suddenly, it started this strange behavior when trying to make the interpolation. All that I was used to do until now, seens not to work anymore.
I have searched all over the web but didn't find any tip on how to resolve this. And I can't remember if I made some change that caused this. Bellow it's a recording of my problem:

Been having the same problem for a while now, it makes my workflow alot harder. Unity 2018.3.5f1 - 2D Animation 2.0.0
As the answer by @phygitalmadhouse suggests, the workaround is to manually type values into the animation.

Use absolute values in the timeline instead rotate the "gizmo" to capture rotations.
