Asset Store and Royalty
Hello!
A while back I bought a 3D-model pack and a Sound effect pack from the asset store.
I've been wondering, if every star in the star happened to align and my game became successful, would I owe something to the asset creators, or do I own the rights to the purchased models and sound effects?

You should really read this yourself, it's important.
But the TLDR of it is, you do not own the rights to the models and sound effects, you have purchased a license to use them.
You would not owe any more if your game becomes successful since that is not in the terms of the license.
It is emphasized that the END-USERS shall not be entitled to distribute or transfer in any way (including, without, limitation by way of sublicense) the Assets in any other way than as integrated components of electronic games and interactive media.
It looks like it should be fine, per the bolded text.
