Can I use my downloads however I want?
If I were to download a big map or a model and use it unchanged. Is it then ok to sell the full game or make an in-game purchase feature? Do I have to credit the creators? And is it ok to make such game in Unity? Should I credit Unity or how is the rules about this?

I'm no lawyer but it should depend on how the original creator is allowing you to use it, any creation is automatically put under copyright so you should keep that in mind. If the creator should say how you can use it in the agreement but you've said. Since you don't know how it's licences I would assume that it has propriety rights to the original owner (meaning you have to buy it to sell it). Therefore I would not include it in the final product

Yes, especially if it's in the final product.
Is it okay to make such a game using other people's creations in unity?
Yes you should be able to make a game like that, however, if you wan't to sell your game you would have to check every single asset you've downloaded for if their owners allow you to distribute them.
People sell games with free assets all the time, and they are free to do so. I would recommend, however, that you avoid doing this though, unless you're doing it for educational purposes. Since the possibility of accidentally using a protected item could lead to legal ramifications.
Should I credit Unity.
You should credit every piece of software within your product.
TLDR; Play it safe and assume everyone wants to protect their creation, that means they want their product only for themselves.
